Its story
Ayvalık has been associated for centuries with olive oil and soap production; the town's old oil mills and factory buildings bear the traces of this past. The oil made from the Ayvalık (Edremit) olive variety, which bears the region's own name, is protected by a geographical indication. The harvest begins in autumn; in the winter months new oil can be seen being pressed at the mills. Aegean cuisine cooked with olive oil and the famous Ayvalık toast are part of the town's food trail.
